
Vegan Tofu Feta made without oil and gluten free!

Ingredients
- 6 TBSP water
- 3 TBSP Apple Cider Vinegar
- 3 TBSP Lemon Juice
- 1 TBSP Nutritional Yeast
- 1 TBSP White Miso Paste
- 1 1/2 tsp Granulated Garlic
- 2 1/2 tsp Oregano
- 2 tsp Mediterrenean Spice Bland Use a pre-bought or make your own
- 1 tsp Sea Salt to taste
- 1 block Extra Firm Tofu

Instructions
- Press liquid from tofu, chop in small cubes.
- Mix water, Apple Cider Vinegar, Lemon Juice, Miso and Spices together in a mixing bowl. Mix until Miso is completely dissolved. Then stir in Nutritional Yeast.
- Place tofu into mixing bowl and toss until liquids and spices are thoroughly mixed into the tofu cubes.
- Place contents of mixing bowl into a jar, shake, and refrigerator for 72 hours to allow the tofu to marinate in the liquids and seasoning.
- After a couple of days, the liquids will be a bit cloudy and the tofu will break down slightly and be very marinated.
- Shake before using. Serve on your favorite salad. The liquids make for a fantastic Greek style salad dressing.
