Vegan Carrot Dogs
I will add more pictures later, a LOT of people have asked me about this recipe so just a quick upload.
Instructions
Peel and shape carrots, not too large in size. I make them about as big around as my finger.
Steam Carrots for 8-10 minutes until tender. You don't want them mushy, just until tender crisp so they have that hot dog snap! (Boiling works too). A reminder that they will soften when they marinate so you don't want to overcook them.
Mix all ingredients together and blend with a wire whisk or in a blender.
Add carrots to your mix and marinate, refrigerated for at least 24 hours. Make sure carrots are covered completely. I prefer several days or so. Since they are in a vinegar base, they will last quite a long time.
Reheat in microwave for 30 seconds to 165 degrees F. Add carrot dog to bun and top with your favorite toppings. They can also be reheated in a saute pan with the marinade liquid.
