Ingredients
- 4 Cups Low Sodium Vegetable Broth
- 1 15 oz can Diced Tomatoes Including juice from can
- 1 7 oz can Tomato Paste
- 2 1/4 Cups Red Lentils Red lentils cook quickly
- 1 Can Cooked Chickpeas
- 1 Large Yellow Onion (OK to substitute white onion)
- 4 Garlic Cloves Minced or Pressed
- 1 tsp Ground Ginger The Spice! (OK to substitute 1 TBSP fresh ground ginger)
- 2 1/4 tsp Garam Masala
- Salt and Pepper to taste
- 1 3/4 cup Coconut Milk light is best, ADD AT END!

Instructions
- In one 5 qt pot, add all ingredients except coconut milk (or you will scorch it). Bring it to a boil and simmer 25 minutes.
- Add 1 & 3/4 cups of coconut milk, stir well - cook until hot.
- Serve over rice, quinoa, or your favorite whole grain.
