One Pot Red Lentil Masala

  1. In one 5 qt pot, add all ingredients except coconut milk (or you will scorch it). Bring it to a boil and simmer 25 minutes.
  2. Add 1 & 3/4 cups of coconut milk, stir well - cook until hot.
  3. Serve over rice, quinoa, or your favorite whole grain.
