Ingredients
- 1 Large Yellow Onion Diced
- 3 Medium Garlic Cloves Minced or Pressed
- 2 Cups Brown or Green Lentils (dry uncooked) Can substitute Red Lentils!
- 2 Large Potatoes Washed and cubed
- 2 Cups Fresh Spinach Tightly Packed
- 1 Large Carrot Chopped
- 5 Cups Low Sodium Vegetable Broth
- 3 TBS Curry Powder (Or Make Your Own Mix - See Note)
- 1/4 tsp Cayenne Pepper (Optional)
- Salt To taste (optional)
- Pepper To taste (optional)

Instructions
- In medium sauce pan, combine ALL ingredients, bring to a boil and simmer 30-40 minutes, stirring occasionally, until desired thickness.
- This is what it will look like about half way done.
- Serve!
Recipe Notes
You may wish to add more vegetable broth to make it more like a soup, I prefer mine thick and more stew like. This recipe can be cut in half for 2 people.
NOTE: This recipe should work fine in an Instant Pot..... toss everything in, stirr well and use the bean or rice setting for 20ish minutes.

Curry Powder:
Is an aromatic Indian spice mix that is a combination of Coriander, Turmeric, Cumin, Ground Mustard, Fenugreek, Paprika, Cardamon, Nutmeg, Cinnamon, and often times Cloves and Cayenne Pepper.
