‘Fooled Pork’ BBQ Jackfruit Sandwiches – Quick & Easy – Vegan!

This ‘Fooled Pork’ BBQ Jackfruit Sandwich recipe is quick and easy, done in under 15 minutes! Many of you know that I was a long time BBQ Restaurant owner prior to going vegan. I get asked about BBQ receipes a LOT and this so far is my favorite! After ditching meat and dairy, I lost 168 lbs / 76 kg! Instructions
  1. Super easy, 5 minutes or so of prep time. 3 ingredients, canned Jackfruit (Amazon or #1.99 / can at Trader Joe's), Red Onion, and BBQ Sauce.
  2. Dice red onion, simmer in water until slightly translucent. Separate Jackfruit with a fork by pressing the fork into it. (See video for details https://youtu.be/2h3IZmP1dEc).
  3. Add Jackfruit and Barbecue Sauce to red onion, stir evenly and simmer for 8 minutes. This is what it will look like when it is done.
  4. Serve on your favorite whole grain bread or bun! I often serve it with a salad or oven baked potato wedges.
