Ingredients
- 1 Pound Potatoes Cubed
- 3 Medium Carrots Sliced
- 2 Medium Golden Beets Cubed
- 2 Small Parsnips Cubed
- 1 Large White Onion Diced
- 2 15 oz Cans Diced Tomatoes Including contents of can (or about 3 cups of freshly diced tomatoes)
- 2 Stalks Celery Sliced
- 6 Medium Garlic Cloves Minced or Pressed
- 1 Cup Fresh Okra Chopped (Optional)
- 4 Cups Low Sodium Vegetable Broth
- 1 TBSP Ground Cumin
- 1 & 1/2 tsp SMOKED Paprika
- 1 TBSP Oregano
- 1 & 1/2 tsp Thyme
- 1/4 tsp Black Pepper
- 1/4 tsp Cayenne Pepper (optional - SPICY)
- 1 tsp Red Pepper Flakes
- 2 tsp Arrow Root
- Salt To Taste

Instructions
- Add diced onion, garlic, and 1 cup of vegetable broth to Instant Pot / Crock Pot Express Cooker and Brown/Saute on high for 5 minutes.
- Add Tomatoes, 3 cups of vegetable broth, and all seasoning and stir until mixed.
- Whisk 2 tsp arrow root into 2 TBSP water and add to broth and stir.
- Add Root vegetables and stir.
- Secure Instant Pot lid and cook on high for 25 minutes. Use the soup setting.
- Serve!

Hi there. Your Cajun Root Vegetable Stew Instant Pot Recipe says to add tomatoes in the instructions but there are no tomatoes listed on the ingredients list. Please advise. Thank you!

Hi, this recipe looks great but I noticed a discrepancy: the ingredient list shows 6c of vegetable broth but in the instructions, it only adds up to 4c up broth being added. I’m trying it now with 4c and the liquid ratio looks right at that amount, but just wanted to call attention to it for others. Thanks!
